ABOUT: Since the early 19th century Barbadillo has been the flagship producer of Sherry in Sanlucar de Barrameda, making extraordinary fino and manzanilla wines from organic vineyards. But we’re here to show you their excellent still wine called Sabalo; made from 30 year old Palomino vines grown in pure albariza soil from two historic vineyards. As much care goes into these wines as their Sherries, the grapes are hand harvested, fermentations are spontaneous, cool and slow, and the wine is aged on its lees. Think of it as a Spanish Muscadet. We’re loving it and the quality is through the roof.
TASTE: This is as good as you might guess. The still wines made in Oporto are excellent, and now we have Barbadillo making a still Palomino, good days to be drinking wine! Youthful aromas and flavors of oranges, lemons, peaches, and green tea, with a pinch of salt. Lithe and food diverse, this is an excellent wine for an array of cuisines. We opened this wine with Thai food and it absolutely sang.
PAIR: Asparagus with parmesan wrapped in puff pastry, dill garlic twice baked potatoes, pesto baked ziti, fresh tomato salsa, and vegetable quiche with thyme and garlic.
