ABOUT: Domaine Andre and Mireille Tissot was founded in the 1960’s in the commune of Montigny-Les-Arsures, a mountainous region of the Jura just outside of Arbois. Currently, production is handled by Benedicte and Stephane Tissot, and their 35-45 hectares of vines are certified biodynamic. This is rugged, hillside winemaking and they have a large year round staff to work it all. In the winery, native yeasts are used for fermentation and minimal amounts of sulfur is used, if at all. All of this can all be said about a lot of wineries/winemakers, but these wines are really something special.This Pinot Noir Sous La Tour became our households favorite wine in the blink of an eye.
TASTE: The Benedicte & Stephane Tissot Pinot Noir Sous La Tour 2018 hails from a hillside of limestone and spends a years in barrel before it is bottled without sulfur and filtration. And is OUTSTANDING. Intense and youthful aromas of cherries, cranberries, smoke, black pepper, mushroom, and tangy citrus. The flavors are fruity but also very savory, ripe cherries and cranberries intermingling with tomato paste and chili spices. Highly extracted flavors with grippy tannins and an endless finish. The wine will develop well for twenty years or more, no question.
PAIR: Roasted eggplant mash, tomato stewed green beans, black pepper crusted fried tofu, vegetable ragu with pappardelle, and miso roasted Brussels sprouts.
