ABOUT: Dirler-Cade is the merging of two Alsatian winemaking families, the marriage of 5th generation Jean Dirler to Ludivine Cadé, combining vineyards lands now totaling 18 hectares in the small village of Bergholtz. 42% of their grapes come from the Grand Cru vineyards Saering, Spiegel, Kessler, and Kitterle and the majority of their holdings are planted to Riesling, Gewurztraminer, and Pinot Gris. Large oak fudres and stainless steel are used during vinification and the vineyards have been farmed biodynamically since 1998 and certified 2007.Check out this article about Domaine Dirler-Cade by Karen Ulrich.

TASTE: The sand-stoney Belzbrunnen lieu-dit lies in between grand cru's Kessler, Spiegel, and Saering. Supreme Riesling is grown here, and this wine has elegant and precise lemon and lime aromas and flavors, with high acidity and a long, nutty, smoky finish. This will be even better in 10-15 years.

PAIR: Lemongrass chili tofu, roasted asparagus with lemon and parmesan cheese, tacos with pickled red onion, and chili roasted peanuts.
