ABOUT: Serge Ferigoule and his amazing moustache launched Le Sang des Cailloux (blood of the stones) in 1990, the same year Vacqueyras was promoted to AC status. Perfect timing. Serge’s 17 hectares of biodynamic certified vines are all on the Plateau des Garrigues, the warmer lowlands where the soils are comprised of red clay, limestone, and the famous galets roules, the rounded stones famous to the area. In 2003 his son joined him in the now family business, guaranteeing a future of amazing wines from this domaine. We’re very familiar with their red wines but this extremely well rated blanc is new to us. The grapes are hand harvested, lees are stirred and malolactic fermentation is completed before spending 12 months in mostly old barrels. Unfined and unfiltered and all gorgeous.

TASTE: What Vinous had to say…”A blend of Grenache, Clairette, Roussanne, Marsanne, Viognier and Bourboulenc, all picked on 22 August. Although it went through malo, it retains a sensation of piercing acidity. It has fresh, open aromatics of lime blossom, honeysuckle and quince. The medium-bodied palate shows impressive concentration, with a gentle oiliness to the texture. Again, it's very fresh, with a mineral element and remarkable concentration.”

PAIR: Pumpkin risotto, Saint-Marcellin cheese with pears, spicy coconut curry, roasted cashew and vegetable stir fry, Chana Masala, and butternut squash with red lentils and tamarind.
